Apple Strudel Coffee Cake
1+1/2 cups flour
2+1/4 teaspoons baking powder
1/2 cup sugar
1/2 cup milk
1+1/2 cups apples (peeled and chopped fine)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1/4 cup butter
Mix ingredients together in a large bowl and stir together well, then pour into a greased 9 x 12 cake pan. Then to make the topping for this - to be placed on top of the batter before baking - mix the following ingredients in a small bowl and stir well:
1/4 Cup of sugar
2 Tablespoons of flour
1 Tablespoon of butter (melted)
1/2 Teaspoon of cinnamon
Pour this topping over the cake batter and bake at 400 degrees for 30 minutes.

Baked Ham
4 to 5 lb ham (ready to eat)
15 to 20 cloves (whole)
mustard (as needed)
1 small can crushed pineapple (drained)
brown sugar (as needed)
Trim off all skin on ham, saturate it with mustard, then cover the whole ham with brown sugar. Drain pineapple juice from can, then cover the ham with pineapple and stick in 15 to 20 cloves in it (about every 2 inches apart). Cover pan and bake at 350 degrees for 1 hour. Then uncover and baste with the juice from the ham and pineapple drippings. Then put it back in the oven and bake (uncovered) for an additional 15 to 20 minutes. Be sure to remove all of the cloves from it before serving.

Bratwurst Dinner
12 bratwurst
10 potatoes (smaller ones)
1 to 2 lbs carrots (sliced or baby carrots)
2 tablespoons water
salt (to taste)
butter (to taste)
Fry bratwurst, poking it thoroughly with a knife and fork to get all of the grease out of it. Peel and slice potatoes and carrots, putting each in a saucepan of water while the meat is frying (note: I just guessed on the amount of potatoes and carrots as I've never measured them, just peel and slice up a pan of each). After the meat is fairly well browned, put it in the bottom of a dutch oven or a covered roasting pan. Then arrange the potatoes on top of the meat, buttering and salting them afterwards. Then put the carrots on the top layer, buttering and salting them as well - the sprinkle around the pan or dutch oven with water before covering. If you're using a roasting pan, bake it in the oven at 350 degrees for about an hour to 90 minutes; otherwise, simmering it in a dutch oven on top of the stove takes about 90 minutes on a low simmer. You can tell it's done when the carrots can easily be poked through with a fork; but you may want to add some extra butter on top of the carrots towards the end if its taking awhile to get done. (Note: this was the first recipe I ever created - that was around 20 years ago).

Chicken And Rice Dinner
1+1/3 cups quick cooking rice
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 cup milk
1 envelope dry onion soup mix
1 frying chicken or chicken parts
Grease 9 x 13 baking dish and sprinkle rice over bottom. Heat the two cans of soup with milk until well blended. Pour over rice. Cut up chicken into parts or just add the pre-cut parts over the top of this and sprinkle with dry onion soup mix. Seal pan with foil and bake for 2 hours at 350 degrees.

Chocolate Chip Oatmeal Nut Cookies
1 cup butter or margarine
1/2 cup sugar
1+1/4 cups brown sugar
2 eggs
2 tablespoons milk
2 teaspoons almond extract or vanilla
1+3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12 oz) chocolate chips
2+1/2 cups oatmeal
3/4 cup pecans or other nuts chopped fine
Combine butter, sugars, eggs, milk, almond or vanilla extract and stir thoroughly. Then add flour, baking soda and salt. After mixture is fully stirred again, add the chocolate chips, oatmeal and finely chopped pecans or other nuts. Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 375 degrees for 10 minutes (or up to 12 minutes if you prefer them crispier).

Chocolate Pudding Fudge
2 packages (3.5 oz) chocolate pudding (not instant)
1 cup milk
2 cups sugar
2 tablespoons butter (don't use margarine)
Cook pudding, milk and sugar to a soft ball stage, then add butter and let it cool some before you beat it together. Pour into a large buttered dish and keep refrigerated.

Cowboy Beans
1 lb bacon
1+1/2 lbs ground beef
1 can kidney beans
1 can butter beans
1 cn 28 oz or 2-21oz Bush or B&M beans or Pork & Beans
1 teaspoon vinegar
1 large handful brown sugar
1/2 cup ketchup
1 trail mustard
salt & pepper to taste
Fry bacon, then remove from pan and break into small pieces. Fry ground beef in the bacon fat. Salt and pepper to taste. When done frying, break ground beef up into small pieces put it with the bacon in a large kettle or dutch oven. Add beans (don't drain them), brown sugar, ketchup and vinegar. Pour or squeeze a trail of mustard (to taste) on top of everything. Mix together and heat thoroughly.

Creamy Chicken Bake
1 tablespoon garlic butter/or a tiny amount (to taste) if using garlic powder
1 can cream of chicken soup
1/4 cup white wine
1 box Stove Top Dressing
1 small amount margarine (more (to taste) if using garlic powder)
4 chicken breasts or 8 thighs
Salt and pepper 4 chicken breasts or 8 thighs, fry until browned in small amount of margarine and garlic butter (use more margarine and a tiny amount of garlic powder if you don't have garlic flavored butter). Put in baking pan or dish. Mix soup and wine and pour over chicken. Put Stove Top Dressing (already prepared) on top and cover with alunimun foil while baking. Bake at 350 degrees for 45 minutes.

Dad's Chocolate Chocolate Chip Cookies
1 cup butter or margarine
1+1/2 cups sugar
2 eggs
1/2 cup cocoa - (mixed with hot water)
1+1/2 teaspoons vanilla extract
2+1/2 cups flour
1+1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 teaspoon cream of tartar
1 package (12 oz) chocolate chips
Mix ingredients together in a large bowl. Drop by teaspoonful onto cookie sheet and bake at 375 degrees for 7 to 10 minutes.

Laurie's Anise Cookies
1/2 cup butter (don't use margarine)
1 cup sugar
1 egg
1/4 teaspoon vanilla extract
1 teaspoon anise
1/4 cup milk
2+1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cream of tartar
Combine all ingredients, chill for 1/2 to 1 hour or more. Roll out and cut with a cookie cutter or small glass. Bake at 375 for 8 to 10 minutes. (Note: the cookies stay white in color and taste like licorice; my sister loves them so they got named after her).

Miracle Whip Chocolate Cake
2 cups flour
2 teaspoons baking soda
1 teaspoon vanilla extract
1 cup Miracle Whip Salad Dressing
1 cup sugar
4 tablespoons cocoa - (heaping)
1 cup cold water
Mix everything together in a large bowl, then put it in a buttered cake pan and bake at 350 degrees for 30-35 minutes. (It may sounds strange, but it makes a very rich and dark devil's food type of cake that tastes great).

Molasses Cookies
3/4 cup margarine - melted
1 cup sugar
1/4 cup (scant) Molasses
1 egg
2 cups flour
1/2 teaspoon cloves
1/2 teaspoon ginger
1/2 teaspoon salt
1 teaspoon cinnamon
2 teaspoons baking soda
1/2 teaspoon cream of tartar
Beat margarine, sugar, molasses and egg together, then add the rest of the ingredients. Chill for 1/2 to 1 hour. Roll into 1 inch balls in sugar. Bake at 375 degrees for 8 to 10 minutes. (Note: you may want to stick a slice of bread in the cookie jar with them as they tend to get rock hard otherwise).

Mom's Candied Meat Loaf
2 lbs ground beef
2 teaspoons soy sauce/1 packet from restaurant
1 egg
1 cup brown sugar
1/4 cup ketchup
12 crackers (crushed)
1 tablespoon minced onions (soaked in hot water)
Mix well together in large bowl (using your hands), then grease a larger size loaf pan and pack the bottom of it with brown sugar before adding the meat loaf. Bake at 350 degrees for 90 minutes. (Note: you can also use the same recipe for making meatballs as well - just eliminate the brown sugar).

My Grandmother's Chow Mein
1 lb ground pork (it usually says for chow mein)
1 lb ground beef
1 bunch celery
2 cups water
1/4 cup soy sauce
1 can mixed chinese vegetables
2 tablespoons flour added to 1 cup of water
1 package chinese noodles
salt & pepper to taste
Fry ground beef first, then fry ground pork in the same frying pan - salting and peppering both to taste and frying until done. Chop up celery (fairly fine) and add to large kettle or dutch oven along with water and chopped up ground pork and beef. Add soy sauce and mixed chinese vegetables; adding more salt and pepper to taste. When celery is tender (nearly done), add the flour to the last cup of water, stir for thickening. Add thickening and cook until done. Pour over chinese noodles to serve. (Note: my Grandmother made this recipe back in the 1930's).

My Great-Grandmother's Sweet Fried Chicken
1 chicken (seperate pieces)
2 tablespoons granulated sugar (heaping)
2 tablespoons water
1/2 lb real butter (No Substitutes!)
flour (as needed)
Melt the butter in a very large skillet or frying pan (Note: you may want to use 2 frying pans if you're planning to make more chicken than what the recipe calls for). Once the butter has completely melted and has been browned, add the sugar to it, then heat and stir until the mixture turns foamy. Add floured chicken pieces and brown very well. After browning the chicken, very lightly sprinkle the water over the chicken pieces. Cover frying pan with lid, turning the chicken over occasionally till done. (Note: this is a very old recipe my Great-Grandmother brought over here from Norway when they immigrated in the 1890's; I have no idea how far it may date back in my family before then).

Orange Delight
2 packages (3 oz) orange Jello
2 cups boiling water
1 pint orange sherbert, softened
1 can mandarin oranges (save liquid)
1 can crushed pineapple (save liquid)
Dissolve Jello in boiling water. Drain mandarin oranges and pineapple (and saving the liquid on both). Use liquid from them with water to make 1 cup. Add to Jello and chill till slightly thickened. Take softened sherbert and in a large bowl, blend in with Jello, mandarin oranges and pineapple. Chill until set in a baking pan or dish and keep refrigerated.

Peanut Butter Cookies
1/2 lb butter (don't use margarine)
1 cup brown sugar
1 cup sugar
1 cup peanut butter
2 eggs
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cream of tartar
Mix together butter, sugars, peanut butter, eggs and vanilla. Then add flour, baking powder, salt, baking soda and cream of tartar. Roll into balls, then roll balls in a small bowl of sugar and put on cookie sheet, then gently criss cross in 2 opposite directions with fork. (Note: you will need to occasionally dip fork into the sugar bowl so that it doesn't stick when making the criss cross pattern in the cookies). Bake at 350 degrees for 10-12 minutes.

Peanut Butter Fudge
1+1/2 cups brown sugar
1+1/2 cups sugar
4 tablespoons butter
1 cup milk
5 tablespoons peanut butter - heaping
Add all ingredients (except peanut butter). Cook to a soft ball stage. Add peanut butter while beating it in a pan of cold water (mom uses the kichen sink).

Pineapple Upside Down Cake
1 box white cake mix + whatever it needs
1 can (20 oz or so) crushed pineapple
brown sugar (as needed)
Lightly grease a 9 x 13 cake pan, drain pineapple juice from can, then spread the crushed pineapple evenly across the bottom of the cake pan and use enough brown sugar on top of that to cover the pineapple. Follow whatever instructions/ingredients are needed for making a white cake. After the cake is ready, pour over the crushed pinneapple and brown sugar and bake the cake according to the directions on the box. Once cake is done and has cooled a bit, carefully flip cake upside down on a large serving platter.

Potato Chip Hot Dish
8 oz bag potato chips
1 can cream of mushroom soup
1 can milk (use the soup can to measure)
1 can tuna (drained)
1 small can small peas (drained)
Crush the potato chips into small pieces. Add cream of mushroom soup to it and milk, then mix together. Flake the tuna into small pieces using a fork, then add that and the peas to the mixture and stir well. Bake in a greased but uncovered casserole dish at 350 degrees for 45 minutes.

Rice Krispie Bars
1/4 cup butter or margarine
5 cups miniature marshmallows
6 cups Rice Krispies cereal
Melt butter and miniature marshmallows together in a large deep pan or dutch oven on a low heat. Once mixture is thoroughly melted and blended together, tun off heat and pour in the Rice Krispies and stir until very well mixed. Pour into a well greased cake pan and refrigerate till hardened before cutting with a sharp knife. Keep refrigerated when not in use.

Roast Turkey Dinner
1 turkey
1 teaspoon salt
1 teaspoon poultry seasoning
2 teaspoons minced onions (soaked in hot water)
1 egg
1 large apple (peeled and chopped fine)
1 loaf white bread
1/4 teaspoon pepper
1/2 cup margarine
1 cup milk
1/4 cup raisins
After turkey has been thawed in water, put in roasting pan; salting ouside as well as in the cavity and lightly covering with butter. To make the dressing, carefully break bread into pieces in large bowl; sprinkle salt, pepper, poultry seasoning, apples and raisins over the bread crumbs. In a saucepan, melt butter and when melted, turn off flame and add minced onions, then mix in milk and egg. Blend together till ingredients are well mixed, then pour over the bread crumbs and using your hands, mix well. Once mixture is well blended, put dressing inside the cavity (don't pack it tight as it expands) and neck if needed (any extra dressing you may have can just sit next to the turkey in the pan). Cover turkey with pan lid or alunimun foil if needed and bake at 325 degrees. Note: you don't count the first hour its in the oven at all - then you allow 20 minutes of baking time (after that first hour) per pound. You may want to remove the covering and baste pan drippings over turkey during the last 30-45 minutes of baking time for a nice golden color. If you want baked potatoes with it, cover them in foil after washing and cutting them lengthwise three times with a knife and put them in the oven an hour before the turkey will be done.

Rosettes
2 eggs
3 tablespoon sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup milk
1 cup flour
some small amount powdered sugar
some small amount melted fat or cooking oil
Beat eggs slightly. Add other ingredients and beat until smooth. Heat rosette iron in hot fat or cooking oil. Dip in batter (about halfway up rosette pattern), then in hot fat or cooking oil until slightly brown. Shake off on newspaper, gently using a fork to remove it if needed. Sprinkle on powdered sugar as desired. (Note: this is a traditional Swedish or Norwegian Christmas cookie, but it can be made at any time of the year).

Ruth's Carmel Rolls
8 or 9 frozen bread rolls (Rhodes)
1/2 small package butterscotch pudding
1/8 cup butter, melted
1/4 cup brown sugar
slightly less than 1/2 tsp cinnamon
The night before baking: grease small but tall baking dish or bundt cakepan; put in frozen rolls, sprinkle with pudding. Next, mix brown sugar with melted butter and pour over rolls. Sprinkle cinnamon on top. Either cover with a damp cloth or very loose fitting Saran Wrap (allowing plenty of room for the dough to rise overnight). The following morning, bake at 350 degrees for 25-30 minutes; then flip them over on a plate and let cool slightly before serving.

Scalloped Corn Side Dish
1 large can cream corn
4 tablespoons butter (melted)
2 eggs
2 tablespoons milk
salt (to taste)
Pour cream corn into buttered baking dish. With a fork, mix in the eggs, melted butter and sprinkle lightly with salt. Then after it's mixed, add the milk and continue mixing with fork until well blended. Bake (uncovered) at 350 degrees for 30 to 40 minutes.

Sean High School Butter Cookies
1/2 cup butter (don't use margarine)
1/2 teaspoon vanilla extract
6 tablespoons sugar
1 dash salt
1 cup (scant) flour
1/2 teaspoon cream of tartar
Mix all ingredients, roll into balls and press to flatten with a cup thats been dipped in sugar. Bake at 350 degrees for 12 to 15 minutes. (Note: this doesn't make very many cookies, but it doesn't taste quite right if you try doubling the recipe for some unknown reason).

Six Layer Bars
1/4 lb butter
1 cup shredded coconut
1 cup graham cracker crumbs
1 can (14 oz) sweetened condensed milk
1 package (12 oz) semi sweet chocolate chips
1 cup walnuts (finely chopped)
Melt butter and pour in the bottom of a well greased 9 x 12 cakepan, then put the graham cracker crumbs in for the next layer, followed by the shredded coconut, then the chocolate chips, then the sweetened condensed milk, and finally the finely chopped walnuts. Bake at 350 degrees for 30-35 minutes.

Special K Bars
1 cup peanut butter
1 package (12 oz) butterscotch chips
7 cups Special K cereal
Melt peanut butter and butterscotch chips slowly in large kettle or dutch oven. When melted, turn off flame and add the cereal. Mix well. Pour into buttered cake pan - it will harden as cooled. Store in refrigerator and cut into pieces with a sharp knife when ready.

Stroganoff From Leftover Beef Roast
1 lb (or more) beef roast leftovers (already cooked)
6 oz noodles (rotini or other type)
1/3 cup milk
1 can cream of mushroom soup
1/4 cup french onion chip dip
1 cup cooked or baked carrots or ready to eat canned carrots (optional)
To make stroganoff out of a leftover beef roast; first boil the noodles, then chop meat into small pieces, then mix together, add in the other ingredients and stir. Bake in a greased covered casserole dish at 350 degrees for 30 minutes; using more or less meat as desired.

Tapioca Fruit Salad
2 small packages vanilla tapioca pudding
1 medium can pineapple tidbits (save liquid)
1 can mandarin oranges (save liquid)
6 cherries (cut up)
1 banana or more (sliced up)
Add water to saved liquids to make 2+3/4th's cups. Mix in pudding and cook until thick. Cool, chill, and add banana slices just before serving. (Make double recipe for a crowd).

Very Tender & Very Well Done Sirloin Tip Roast
1 sirloin tip roast
1-1+1/2 8 oz glass water
3 tablespoons flour
1 cup milk
enough mashed potatoes for gravy
Take sirloin tip roast when still partially frozen, salt and pepper it real good; wrap in alunimun foil, bake at 450 degrees for the first hour, then reduce heat to 350 degrees for 2+1/2 hours after that. During the last half hour or so, make mashed potatoes and prick the foil on the bottom of the meat to let the juices into the pan for the gravy. For the gravy, add 1 to 1+1/2 - 8 oz glass of water to the burned drippings. Stir in 3 tablespoons of flour and 1 cup of milk that have been mixed together. Bring to a boil, add salt and pepper if necessary.
